Beginning Cream, Fondant & Gum Paste Flowers & Designs


Course Description:

Creating flowers, shapes and designs in fondant will give your cakes that extra something and make a great presentation.  In this course, students will learn the best uses of fondant and gum paste; coloring; making basic blossoms and cupped flowers; cut-outs; overlays; and use of molds.  Students in this class will have the option of choosing to create one of the following cake designs:


Course Prerequisite:

Completion of Course #102 – or comparable knowledge of basic decorating techniques as described in that course.


Course Objectives

  • The preparation, uses, coloring and handling techniques for fondant and gum paste.
  • Use of different tools and equipment and how to best utilize them to create the desired design or flowers.


Lesson Plan

This 4-hour course will cover the course objectives as outlined above.


Course Completion

Students will take home their completed and decorated cakes at the conclusion of this course.



Please Note:   The class outline as described above is general in nature to the skills taught and includes different items and techniques that are planned for this course.  However, please keep in mind that due to small size of our classes, the differing skill levels of each student, and the intimate teaching methods utilized – some of the above-described items may not be taught in every class.  If there are items listed above that are of specific interest to you, please be sure to advise the instructor or notify us with a note in your registration documents so that we can be certain to accommodate you with training on your requested topics .All tools, supplies and equipment will be provided by Pastry Palace for participation in this course.
