Cake Preparation

Course Description:

Designed for the beginning cake decorator – or for those who have never received formal training in proper cake preparation – this course will teach students all of the basics involved with proper recipes, baking methods, cake leveling, icing recipes and uses, crumb-coating a cake, icing a cake to prepare for decorating, and the identification and proper use of cake preparation tools, pastry bags, tips and other basic equipment..



Beginning Cake Preparation


Course Prerequisite:

No previous cake preparation or decorating skills required.


Course Objectives

  • Students will learn proper professional three-layer cake preparation – the basis for any decorated cake design.
  • While cakes will be provided at the start of this course, the instructor will lecture regarding industry tips and practices that will provide each student with a solid foundation and understanding of basic cake prep techniques.
  • Students will learn how to level and crumb-coat a cake, apply the icing base required prior to decorating a cake, and the differences between icings and best uses for different recipes.
  • When completed, students will have learned the basic cake preparation techniques that will serve their needs for all future cake decorating/design training.


Lesson Plan

This 5-hour course will cover the course objectives as outlined above.


Course Completion

Students will take home their crumb-coated, iced cakes which will be suitable for decorating at the completion of this course.



Please Note:   The class outline as described above is general in nature to the skills taught and includes different items and techniques that are planned for this course.  However, please keep in mind that due to small size of our classes, the differing skill levels of each student, and the intimate teaching methods utilized – some of the above-described items may not be taught in every class.  If there are items listed above that are of specific interest to you, please be sure to advise the instructor or notify us with a note in your registration documents so that we can be certain to accommodate you with training on your requested topics .All tools, supplies and equipment will be provided by Pastry Palace for participation in this course.
